Recipe of the Moment: Grilled Pineapple

This is from French Women Don't Get Fat, and it is absolutely delicious. If you're feeling lazy, you can just grill the pineapple on the stove and drizzle the honey and goat cheese over the end result.

4 thick pineapple slices
2 teaspoon of honey
Juice of 2 lemons
Goat cheese
Ground pepper

Make crisscross slashes with a knife on each slice of pineapple to get a nice presentation after grilling. Broil until the pineapple turns a nice caramel color, but be careful not to burn.

In a small saucepan, boil the lemon juice and honey for 2-3 minutes. Let cool, add pepper and cinnamon to taste, and drizzle over the pineapple slices. Serve immediately with goat cheese sprinkled on top.

  2. It's very sweet; I love it! Obviously, the more honey you use, the sweeter it gets. That's why I prefer to just drizzle the honey on the pineapple.
